Raw Vegan Peppermint Slice

I have a deep love for anything peppermint, and these raw vegan peppermint slices definitely satisfy that craving for something completely and utterly decadent.

Ingredients:

For the base –

  • 1/2 buckwheat flour
  • Heaped 1/4 cup raw cacao powder
  • 1 cup pecans/ walnuts
  • 15 pitted medjool dates (or dried dated that have been soaked)
  • 2tsp coconut oil
  • Pinch of salt

For the mint cream filling –

  • Heaped 1 cup soaked cashews (drained)
  • 1/2 cup coconut oil
  • 6-7 drops peppermint essence
  • 1/2 cup maple syrup or rice malt syrup
  • 1/4 cup coconut butter (can make by blending shredded coconut for 5+ minutes)
  • 1tsp vanilla essense
  • Pinch of salt

For the chocolate layer –

  • 3/4 cup soaked cashews (drained)
  • 1/2 cup raw cacao powder
  • 1/2 cup coconut oil
  • 1tsp vanilla essense
  • 1/4 cup maple syrup or rice malt syrup

Method:

For the biscuit base –

  1. In a food processor, blitz the pecans/ walnuts until crumbly.
  2. Then add buckwheat flour, cacao and salt. Blitz again for a few seconds, then add the coconut oil and dates.
  3. Once the mixture forms a dough, press into a lined baking tray. Leave to the side.

For the mint cream filling –

  1. Blend all the ingredients in a food processor.
  2. Evenly pour the filling over the biscuit base then place in the freezer to set.

For the chocolate layer –

  1. Blend all the ingredients in a food processor.
  2. Evenly pour the filling over the mint cream filling then place into the freezer again to set.

Once all the layers have set, cut into equal squares or rectangles (depending on the shape of your cake tin) and keep stored in the freezer. These are delicious eaten straight from the freezer, and have definitely been a crowd pleaser in my household.
